shrimp cooked with mango pico and bacon , served over spaghetti sqaush


 
 
 
 
 

This was a completely random meal I really wanted mango pico and really wanted to try spaghetti squash so this is what came about . a mouth full of semi healthy, flavorful, joy! 
 
*(serves 4) so adjust as you need too
you will need:
 
-1.5 lb. of medium or large shrimp    (deveined and shelled)
-1 tbsp. of butter
-1 tbsp. of honey 
-1/2 lemon squeezed
-1 tsp. of garlic pepper
 
pico:
-1 mango diced
-1/2 white onion diced
-1/2 cup of fresh chopped cilantro
-2 Serrano peppers diced (jalapenos will work fine too)
-1/2 lemon
 
-3 slices of smoked bacon chopped
 
spaghetti squash:
-1 spaghetti squash
-1 tbsp. honey
-garlic pepper
-1/4 cup of fresh chopped cilantro
 
 
step 1 : spaghetti squash
- you can cook your spaghetti squash 2 way ..(A) using a knife make a slit in your spaghetti squash and bake for 30-45 minutes or until squash is softened or (b) if your like me and don't have time to wait make a slit in your squash and microwave 7-10 minutes until squash is softened
 
 
step 2:pico
-mix your pico mix together in a small bowl, squeeze lemon juice and stir
 
step 3:
-in a medium non-stick pan on medium heat toss in your chopped bacon
- when bacon is half way done toss in your mango pico and stir
 
step 4:shrimp
-in a small bowl add your honey , butter , squeeze in lemon juice and microwave for 30 seconds
-pour over shrimp stir and add to your bacon and pico turn heat to medium high.
-cook for 3 minutes and remove from heat
 
step 5: squash
- once your squash is softened slice in half ,vertically .
-usind a fork scoop out strands of squash *hince the spaghetti into a medium sized bowl
(be sure to remove seeds and core ,the core will be darker than rest of squash)
-once you have all your spaghetti squash in a bowl sprinkle in garlic pepper, chopped cilantro and pour in honey .
-stir this all together incorporating the honey really well
 
step 6:
serve shrimp pico mix over spaghetti squash and enjoy a mouthful of fresh  flavors !
