not your grandma's Pecan Pie !
I am personally not a huge fan of "Traditional" Pecan Pie. so this was created to appeal to everyone. Instead of a traditional jelly like filling you will be using my favorite, Cream Cheese !
preheat oven 350 degrees
you will need :
topping:
-3 eggs
-1/4 cup of sugar
-3 tbsp. of brown sugar
-1 tsp of maple syrup (optional)
-1 cup light corn syrup
-1 teaspoon of vanilla extract
filling:
-8oz of cream cheese *room temperature
-1/2cup of sugar
-1/4 teaspoon of vanilla
-1 egg
-1/4 tsp. of salt
-2 cups of chopped pecans toasted
-1 un-baked pie crust thawed
-1 pie pan
-butter (optional)
-cinnamon (optional
step 1 : in a large bowl using a hand mixer , mix all your ingredients for your filling
step 2 : in a medium bowl whisk together topping ingredients
step 3: place your pie crust in your pan lightly rub with butter all over and pour in pie filling
step 4: place toasted pecans on top of filling and pour topping on top (SLOWLY) do not over flow your pie if you have a little left over that is okay .
step 5 : bake for 30-35 minutes and let cool for at least an hour and a half
serve with French vanilla ice cream!
