fish tacos with brown rice pilaf


this was a late night meal

good, simple and easy

makes six tacos

you will need :
-2 fillets of swai
-1tsp creole Cajun seasoning
-1tsp lemon pepper
-1tsp cayenne pepper
-tbsp. garlic powder
-olive oil
-6 corn tortillas


Pico sauce:
-2 roma tomatoes diced
-1/4 cup chopped fresh cilantro
-1/2 cup of diced white onion
-1 Serrano pepper chopped
-2 tbsp. of miracle whip
-1 lime

pilaf:
-birds eye steam fresh brown rice
-1/4 cup of  frozen mixed vegetable
-1 tsp of garlic powder
-1 tsp of salt
-1 tsp of lime juice

step 1:pilaf
-in a medium pot bring to boil 1/2 cup of water
-add in your vegetables and boil for about 5 minutes or until vegetables are tender and drain
-cook your steam fresh brown rice according to instructions on package
-add your brown rice to your vegetables , add in seasoning and lime juice , stir and put aside

step 2:
-mix all your seasoning for you fish together in a small bowl
-sprinkle the top of your fish with your seasoning mix all over
-in a large non stick pan on medium heat drizzle olive oil in your pan
-place your fillet seasoning side down
-let cook until the seasoned side has a dark golden crust and the filet is completely white

step 3:
- in a small bowl mix all your ingredients for your Pico sauce together
-softened your lime by using your palm to roll it back and forth on the counter
-slice your lime in half and squeeze out all the lime juice in to your Pico , stir and set to the side

step 4:

-in a small pan drizzle a little olive oil and heat each tortilla one by one

step 5 :

-break your fish up as you wish and serve in your corn tortilla ,spoon Pico sauce over fish and serve !
