Shrimp Po' Boy






Shrimp po'boy

for shrimp:
-1lb large sized shrimp
-1/2 cup of flour
-1/4 Cup of cornmeal
-2 tbsp of tony chacheres creole seasoning
-1tsp parsley
-1 tsp of lemon pepper seasoning
-2 eggs
-1 1/2 cup of vegetable oil

-1 tomato sliced
- shredded romaine lettuce
-4 French rolls

Remoulade:
1/4 cup of mustard
1 tsp. of hot sauce
1 1/2 cup of miracle whip
1 teaspoon of vinegar
1 minced garlic clove
1 tbsp. of sweet paprika
1 tsp of cayenne pepper
2 tsps. of creole seasoning
1 tsp. of lemon juice

Fries:
-6 sliced russet potatoes
-1 tsp of  onion powder
- creole seasoning
-2 cups of vegetable oil

step 1:(fries)
- in a large frying pan bring vegetable oil to medium high heat
- add in fries cook until golden brown and tender (move to step 2 in the meantime)
- in a large bowl place several napkins( to help soak excess grease)
- using  a  seving spoon with holes add fries to bowl
- sprinkle with seasonings and set aside

step 2:
- mix all your ingredients for your remoulade in a medium bowl .. stir until it becomes an orange pasty color and seasoning are completely mixed in. cover and set in refrigerator.

step3:
-in a medium sized bowl combine flour, corn meal an seasonings together
-crack to eggs and whisk in a medium bowl
- then add shrimp to egg
- dip shrimp in corn meal mixture. be sure your shrimp is completely coated in the corn meal this will make the crust nice and crisp


step 4:
- in a medium sized frying pan bring vegetable oil to medium high heat  add in shrimp let cook for 2 minutes and remove from heat
- in a medium bowl place several napkins , drain and place shrimp in bowl to remove excess grease

step 5:
-warm your French rolls in the microwave for approx. 15 seconds
-slice French roll half way open
-spread remoulade  on top and bottom of roll
-add lettuce on bottom, shrimp in the middle and tomatoes on top
- serve with a side of  fries and enjoy !!!
