macaroni and cheese with meatballs stuffed gorgonzola and spinach !!

preheat oven to 375 degrees

this so good, definitely a family favorite !!

this recipe makes 6 medium sized meatballs

you will need

macaroni:
-1 box of barilla mini penne pasta or macaroni *I used both :) doesn't really matter which one
-1 can of Campbell's cream of chicken
-1lb of shredded mozzarella cheese
-1 tsp. of salt
-1 tsp. of parsley
-1 tsp of black pepper
-1/2 tsp of cayenne pepper
-1 tsp of paprika
-1 cup of spinach
-2 tbsp. of butter

Meatballs :
-1.5 lbs of ground chicken *thawed
-spinach leaves
-gorgonzola cheese crumbles
-4 pieces of toast
-1 tsp of onion powder
-1 tsp of garlic powder
-1 tsp of seasoning salt
-1 tsp of paprika
-1 tsp of cayenne pepper

step 1:(meatballs)
-in a large bowl add in ground chicken , onion powder, garlic powder, seasoning salt, paprika and cayenne
-using your hands mix your ground chicken and seasonings together
-crush 1 toast into meat ,*be sure to remove any big chunks and mix together
-using an ice cream scoop , scoop out your ground chicken onto a cutting board or plate
-flatten into a circle *it doesn't have to be perfect
-in the center measuring about the size of a quarter
-place about 2 leaves of spinach (tear them in half and stack on top of each other)
-place a few crumbles of gorgonzola on top of spinach
-fold over meat starting with the top . once your meat is folded over covering spinach and cheese, pick up and mold into a circle( if you get a hole and have to add a little meat to do some patchwork go ahead) repeat these steps until there is no more meat

step 2:
-crush up the rest of your toast in a bowl (remove any chunks )
-sprinkle in 1 tsp of your gorgonzola
-roll each meatball in your bread crumbs and place in baking pan
-once you have coated eat meatball in breadcrumbs bake in oven for 10-15 minutes

step 3:
-in a large pot boil your macaroni or noodle of choice until tender and drain
-in a small pot heat up cream of chicken (instead off adding 1 can of water like the can instructs only use 1/2 a can)
-sprinkle in all seasoning for your mac n cheese then add 1/2 of your  cream of chicken ,then  butter and mozzarella .
-toss in your spinach and pour the rest of your cream of chicken and stir

step4 : serve macaroni in a bowl serve with meat balls on top. sprinkle gorgonzola crumbles and wah-lah !!! bon appetit !
