chicken curry


my take on chicken curry

4 servings

you will need

-1lb of chicken breast cut in cubes
-1 squash sliced
-1/4 cup of frozen mixed vegetables
-1/4 cup of chopped  kale greens
-1/2 yellow onion diced
-2 green onions sliced
-1 jalapeno sliced
-2tsp curry powder
-2tsp of garlic powder
-1tsp of salt
-1tbsp of olive oil
-1/2 cup of rice
-1 cup of water

curry sauce
-4tbsp of olive oil
-2tbsp of flour
-2tbsp of curry powder
-1tbsp of garlic powder
-1tsp of onion powder
-1tsp of black pepper
-1tsp of salt
-2 cups of water

Step 1:
  • in a medium sized pot bring water to boil
  • add rice
  • when rice is half way done add in kale (add a dash of salt & black pepper)
  • cook till rice is tender
Step 2:
  • in a large pan bring olive oil to medium high heat
  • season chicken breast with curry powder, garlic powder & salt
  • add chicken to pan cook till chicken is tender
  • remove chicken from pan and place in a bowl (you will add the chicken back later)
step 3(curry sauce):
  • In the same pan you cooked your chicken (on medium heat) add in olive oil
  • sprinkle in  flour
  • with a fork whisk flour and oil together, heat until light brown
  • while stirring add in water slowly
  • sprinkle in seasoning
step 4:
  • add in all vegetables to sauce
  • cook until squash is tender
  • add in chicken
  • cover and cook for 3 minutes
step 5:
  •  serve chicken curry over rice
  • dinner is SERVED
