Tilapia with seared shrimp
preheat oven to 325 degrees
you will need
tilapia:
-4 fillets of tilapia
-8 slices of lemon
-1 bunch of cilantro
- 2 cloves of garlic chopped
-creole or old bay seasoning
butter sauce
-1/3 cup of melted butter
- 1 tsp. of parsley
-1 tsp. of fish sauce
-1 tsp. of garlic powder
shrimp
-1lb of large shelled and deveined shrimp
-1/4 cup of vegetable oil
-1 tbsp. of fish sauce
-1 /2 of parsley
-1 tsp. of minced garlic or garlic powder
step 1:
- get out 1 sheet of foil paper
-layer your tilapia like so ; Tilapia , sprinkle your seasoning of choice on top, garlic, lemon, cilantro
- place in oven for about 15 minutes or until fish is white and flakey
step2:butter sauce
-prepare your butter sauce by adding seasoning to melted butter and set aside
step 3:shrimp
- in a medium non stick pan on medium high heat pour in oil , add in your shrimp , add in fish sauce then butter , garlic and parsley . cook 3-5 minutes.
step 4 :
-remove tilapia from oven in a large not stick pan add in a 1 tbsp. of butter
-place each fillet of tilapia in pan and cook for 2 minutes until tilapia has a light golden brown crust
serve with shrimp on top of tilapia drizzle butter sauce on top or on the side. serve with lemons and your choice of vegetables
stuffed pototoes
you will need
-1.5 lbs. of ground turkey
-1 tsp. of garlic powder
-1/4 tsp. of cayenne pepper
-1 tbsp. of seasoning salt or creole seasoning
- 1/2 tsp. of black pepper
-1 tsp of onion powder
-1 cup of sour cream
- 1/2 can of tomato paste
8 potatoes (any king works fine I prefer golden or yellow potatoes)
butter sauce :
-1/4 cup of butter melted
-1 tsp of garlic powder
step 1:
-brown your ground turkey add in all your seasoning and stir .. cook until completely brown.
do not drain grease
- add in tomato paste and sour cream .. cook for 5 more minutes on medium-low heat
step 2:
-cook your potatoes in the microwave for 4-6 minutes until soft and let cool for 5 minutes
step 3:
-make your butter sauce and set to the side
step 4:
- using a knife scoop out the centers of your potatoes
and stuff with your filling .. drizzle butter sauce on the skins of potatoes and enjoy !
strawberry pound cake
preheat 350 degrees
-1 cup butter
-1 1/2 cups white sugar
-1/4 cup of brown sugar
-2 eggs
-1 teaspoon vanilla extract
-1 teaspoon ground walnuts (optional)
-2 cups all-purpose flour (sifted)
-1/3 cup milk
-1 1./4 cup quartered strawberries
-1/4 cup water
icing:
1 cup of powdered sugar
1/4 tsp. of vanilla
2 tbsp. of water
1 tsp. of butter
makes 2 loaf pans
step 1 :
-mix your butter, white sugar and brown sugar until fluffy
step 2 :
-add in eggs and vanilla, mix until eggs are well incorporated
then fold in nuts
step 3:
-add in flour and milk until smooth
-fold in strawberries and water .. (do not over mix)
step 4:
- grease pans all over with butter
-flour pans
- pour in batter and bake for 1 hour or until a knife comes out clean
-let cake set in pans for 5 minutes and remove
step 5 :
-mix ingredients for icing it will thicken as it settles drizzle over cake as desired
**Tip:
for a super moist cake let cake cover with foil paper and let set for 3 hours or over night.
the foil traps in the moisture and sets it back into the cake

Moist Banana Nut breat
preheat to 350 degrees
you will need
-1 cup of all purpose flour
-2 extra ripe, mashed
-3/4 cup of white sugar
-1/2 cup of brown sugar
-2 eggs beaten
-1/2 cup of chopped walnuts
-1/3 of butter or margarine
-1 tsp. of baking soda
-1/2 tsp. of salt
step 1:
sift together white sugar , brown sugar, flour, salt, and baking soda
step 2:
-mix together eggs and butter and well mixed
-add in mashed bananas and stir
step 3:
-add wet ingredients to dry ingredients
-mix until smooth
-add in walnuts and stir
step 4:
-grease and flour a 9x5 inch pan and pour in filling
-bake 55- 65 minutes until golden brown .. use a butter knife and poke a whole
if it comes out dry then your bread is ready
*let cool for at least 45 minutes
cover with foil to trap in moisture
apple cobbler
preheat to 350 degrees
so easy
you will need :
filling:
-6 granny smith apples peeled and sliced (be sure not to slice too thick about the thickness of 2 quarters
-2 cups of orange juice
-1/2 cup of brown sugar
-1 cup of butter
-1/4 tsp. of ginger
-2 tsp. of cinnamon
-1 tsp. of pumpkin pie mix
crust:
-2 cups of pancake flour mix of choice ( I use hungry jack)
-4 tbsp. of butter
-water
step1: apples
- soak your apple slices in orange juice for 10 minutes
step 2:filling
-in a large pan on medium heat add in butter
- once butter is mostly melted add in brown sugar
- stir until brown sugar dissolves and becomes caramel like
- add in apples and 1tbsp of the orange juice used for apples
- add in seasoning and cook for about 8 minutes until apples are firm and tender
step 3: crust
- in a large bowl pour in your pancake flour and add in butter
- using a hand mixer blend in your butter . it will look a little lumpy
- then with your hand mixer on low pour in water until smooth and thick but not watery
step 4:
-in a 9x9 inch pan butter the whole bottom of pan and sides
-pour in half your crust mix
-then spoon in your in filling (pour off excess syrup)
-spoon the rest of the crust on top
-bake for 30 minutes or until crust is golden brown
Serve with French vanilla ice cream, drizzle caramel sauce from filling over ice cream and enjoy !

Catfish sandwhich topped with a mango vinegar salad, and fried pickles served on toasted sourdough
this is for 4 sandwiches
you will need
Catfish
-2 fillets of catfish cut in half
egg wash:
-3 eggs whisked
-1 tsp. of creole seasoning
-1 tsp. of lemon pepper seasoning
-8 sliced of sourdough bread
corn meal mix:
-1 cup of corn meal
-1/3 cup of flour
- 1/2 tsp. of salt
-1/2 tsp. of black pepper
-1 cup of vegetable oil
mango vinegar salad :
- 1/2 a head of purple cabbage thinly chopped
-1 tomato sliced
-1 mango diced
-1/2 white onion sliced
-1/4 cup of olive oil
-1/3 cup of red wine vinegar
-1 cap of white distilled vinegar
-1 tsp of black pepper
-1/2 tsp of salt
-1/2 tsp of cayenne pepper
-1 minced clove of garlic
fried pickles :
- 8 dill pickles
-3/4 cup of flour
-1 tsp of onion powder
-1/4 tsp of black pepper
-1/4 tsp of salt
-1 large egg whisked
-1/2 cup of vegetable oil
step 1:mango vinegar salad
- mix olive oil, red wine vinegar, white vinegar, black pepper, salt cayenne and minced garlic together in a small bowl
- in another bowl combine your cabbage, onions, tomato , and mango together
- pour your vinegar mix over vegetables stir and place in your refrigerator
step 2:egg wash
- add all your seasoning to your whisked eggs and stir
step 3: corn meal
- combine all ingredients and stir
step4:
in a large frying pan add in vegetable oil and turn to medium high heat
step 5:
-coat each fillet of catfish in your egg wash then in cornmeal mix
step 6:
- add fillet to frying pan and fry approx. 43 minutes on each side or until the crust is light golden brown and fish is white inside
- repeat for each fillet
step 7:fried pickles
-in a medium frying add in vegetable oil and turn to medium high heat
- coat each pickle in whisked eggs coat in flour and fry until a golden brown crust forms
- toast your sourdough bread
serve on top of sourdough bread in this order
2 fried pickles, catfish fillet, mango vinegar salad. and enjoy !
