basil pesto shrimp with couscous
fresh quick and simple !
you will need:
1.5 lb of shrimp
pesto:
-1 cup of fresh basil leaves
-2 garlic cloves
-1 tbsp. of walnuts
-1/4 cup of olive oil
-1/2 tsp. of salt
-1/2 tsp. of black pepper
coucoud
1 cup of couscous
1 1/4 cup of water
1/2 cup chopped cilantro
1 lemon squeezed
-1 tsp. of salt
- 1/2 tsp of black pepper
- 1 minced garlic clove
step 1:
- using a blender or food processor add in all your ingredients and blend until there are no more chunks
-cover shrimp in pesto and set to the side
step 2:
-in a medium sized pot bring water to a boil
- add in couscous
- cook for 5 minutes and remove from heat
step 3:
-in a medium non stick pan on medium high heat add in shrimp cook for 5 minutes and remove from heat
step 4:
-add chopped parsley, minced garlic, chopped parsley, lemon juice, black pepper and salt to couscous
step 5 :
- serve basil shrimp over couscous and enjoy !!
