fried swai, baked, sweet potatoes , cream sauce
this was so good and easy
you will need:
-4 fillets of swai ( this recipe is great for catfish as well)
-vegetable oil
-1 lemon
-1 lime
-2 sweet potatoes
-2 tsp. of butter
-sugar
-cinnamon
Corn Meal seasoning:
-1 cup of corn meal
-1/2 cup of flour
-1 tbsp. of tony chacheres creole seasoning
-1 tsp. of lemon pepper
-1/2 tsp. of salt
egg wash:
-5 eggs whisked
-1/2 tsp. of lemon pepper
-1/2 creole seasoning
Fish dipping sauce:
-1/2 cup of miracle whip
-1 tbsp. of sweet relish
-1/2 tsp. creole seasoning
-1 tsp. paprika
-1/2 tsp. of ginger
-1 tsp. of cayenne pepper
-1 tsp. of garlic
-1/2 tsp. of black pepper
-1 tsp. of lemon pepper seasoning
step 1:
*to cook sweet potatoes you can bake them for 45 mins on 400 degrees, me personally I cook them in the microwave for 5-6 mins I don't see a difference in the taste but that's up to you :)
let sit until ready to serve
-in a large bowl using a fork, mix all your ingredients for your corn meal seasoning
-(egg wash) in a medium bowl, whisk eggs and seasoning and set to side
step 2:
-in a small bowl, mix ingredients for fish dipping sauce and set in fridge
step 3:
-in a large frying pan pour in vegetable oil .. it should be about 2 inches of vegetable oil
-bring to medium heat
step 4:
-dip your fillet in the egg wash and completely coat the fillet
-then dip your fillet in your cornmeal seasoning mix , completely coat
and place in frying pan
*repeat steps for each fillet
**your fillets should not overlap each other while frying
-fry for approx. 3 minutes on each side or until fish is white and flaky
step 5:
- serve fish with sauce, lemon & limes
-cut sweet potatoes in half spread butter and sprinkle with sugar and cinnamon
eat up !
