chorizo and egg omelet
this was a random recipe, my husband hates eggs so I had to figure out a way to conceal the taste
you will need:
-3 eggs (for each omelet)
-1 casing of cooked chorizo cooled down and set to the side
-1 zucchini sliced and cut in halved
-1/4 cup of chopped yellow onions
-1/2 cup of owens sausage
-5 slices of smoked thick bacon diced
-1/4 cup of shredded cheddar cheese
- 1 Roma tomato diced
-butter
step 1:
-in a mixing bowl stir in eggs and chorizo, mix well until chorizo is no longer chunky
-set to the side
step 2:(filling)
- in a large non stick skillet on medium high heat add in bacon and sausage . be sure to break up sausage
- and in zucchini and onions
-cook until bacon in crisp and vegetables are tender
-in a bowl place a paper towel in the center pour in filling
-this will help remove excess grease
step 3:
- in a medium non stick skillet on medium heat add in 1tsp of butter
-pour in egg and chorizo mixture
-cook until egg becomes all the way solid
-spoon in filling on one half
-top with shredded cheese
- fold omelet press down with spatula and plate
-top with diced tomatoes and cheese
