pig in a blanket
this was so good and easy I will be posting the recipe for pork sirloin wrapped in biscuits and roasted garlic potatoes
preheat oven to 375 degrees
you will need :
-(4) 8 oz pork sirloin
-1 can of Grands layers biscuits ( original or butter flavor )
-8 slices of smoked bacon
-(1/4) cup of red wine vinegar
-(1/4) cup of soy sauce
-1 tbsp. of garlic powder
-1/4 tsp. of salt
-1/4 cup of olive oil
Roasted potatoes
-4 russet potatoes diced
-3 cloves of minced garlic
-1 tbsp. of rosemary
-1 tbsp. of dill seed
-1 tsp. of salt
-olive oil
step 1:
-in a large bowl pour in your red wine vinegar, soy sauce and seasoning and stir together
- add in your pork sirloin and coat your sirloin in your seasoning marinade
- let sit for 10 minutes
step2:
-wrap each sirloin in two slices of smoked bacon and set aside
step2:
- in a medium bowl pour in diced potatoes , add minced garlic, rosemary, salt, dill seed and olive oil .stir together and let sit.
step 3:
-in a large skillet pour in olive oil and bring to medium heat
- add in each sirloin let sear for 3 minutes on each side until bacon is crisp on each side
-take out of pan and set aside wipe away excess grease
step 4:
- in the same pan you seared your sirloin on medium heat add in your potatoes (its okay if there is a little grease still left in the pan)
-let cook for approx. 15 minutes or until potatoes become tender. stir occasionally)
step 5:
- open your Grands biscuits. on a glass plate flatten and stretch 8 biscuits . (your dough should be thin but not see through.) each biscuit should be stretched out enough to cover the top of a pork sirloin
- once you have stretched out and flatten each biscuit your going to place one biscuit on top and one on the bottom of each sirloin and then pinch the sides together so that each sirloin is completely covered in dough
step 6:
- in a non stick baking pan ,bake your pigs in a blanket for 10 - 15 minutes or until the biscuit dough is a Golden Brown the crust should be flaky
step 7:
- remove roasted potatoes from pan drain any excess grease
serve together this is a simple wow meal so good and flavorful !
